We are still here, I promise.

Hey there everyone. Okay, this time it has been a while since we have posted last. We are still doing this Paleo thing, lol. We are still going very strong with no cheats. Things have just been busy lately for Joelle and myself. By the time we sit down at night the last thing we are looking to do is blog. Blogging is more difficult than it sounds, at least for Joelle and myself. I know when I blog I want to put a quality product out there. It takes some time and thought to put together a good blog post each time. It is not just like you sit down and in 10 minutes you have a great blog post. Especially if you want to add pictures, talk about recipes, attach things and get all of your thoughts out there.

Let’s talk Paleo for a bit. Since the last time we posted a lot has gone on. We have tried some new recipes that include Jambalaya, Chicken BLT Lettuce Wraps with a basil mayo, Coconut fried rice just to name a few. I will put the links to those recipes at the bottom of the post. We made the jambalaya for our friends that came over for dinner one night. With it being close to Mardi Gras season we thought that could not be a more fitting dish and the best part, it is an all in one dish. I really like dishes like that because all you need is a bowl and a utensil of you choice.  We substituted cauliflower rice and still added andouille sausage, chicken, shrimp along with some spices. I also added a pinch of habanero powder that I got from a friend of mine at the gym. That added a nice little spiciness to it. Last week Joelle got the cook book “Against All Grain”. Our first recipe that we tried out of there was the chicken blt lettuce wraps. We made a basil mayo to accompany the wrap. These were amazing and brought me back to when I used to go out to lunch with my Grandpa. I explained to Joelle in detail how my taste buds instantly made old memories come back. Crazy how food can do that. My grandpa loved going out to these little Greek diners for lunch. They were nothing special and pretty much had a menu that was twenty pages long. Literally if you could think of something then they probably had it on there menu. Being a younger boy, I would always see people ordering these big triangle cut sandwiches and was so interested in trying them purely just because of there size. My grandpa let me know it was a club sandwich. I used to get those from time to time with my grandpa and biting into our homemade blt’s brought me back to those lunch dates with my grandpa. Our blt’s were so damn good that Joelle and I definitely did some over indulging and had multiple sandwiches. Lastely,  we made some coconut fried cauliflower rice last night which was really good. This was also from “Against All Grain”. The coconut added a nice sweetness to the rice. We have made regular fried rice before which is a little more salty like most of us are used to. This was definitely a nice change up.

As far as our grocery shopping has been concerned lately, we are still staying well with in our budget each week and we have become avid price matchers. What has been nice is now that we are getting closer to spring we are starting to see some new produce on sale at the stores. We have been getting strawberries, blueberries, asparagus and broccoli for some really good prices the past couple of weeks.

We have not had really temptations to cheat lately and I really think that is mostly due to how busy we are. When we are so busy it is very easy for us to just stay on track. I feel like when we have more down time that is when we start having bad thoughts and think about those foods that we cannot have.

This weekend we have some plans with friends. Saturday night we will be going over to a friends house for a game night. We have no worries there because they are Paleo too. On Sunday we are meeting some friends for lunch up in Naperville but we have already planned ahead so we do not run into any problems. We are going to lunch at either BD’s Mongolian grill or Flat Top.  Either way eating Paleo there will be no problem .

    Enjoyed meeting you both last night and learning about your journey. Nice to meet new people who are eat Paleo. Looking forward to trying some of the recipes. Can you please send me the recipe for the balsamic dressing you brought to the party last night, loved it.

      Tom- It was very nice to meet you and Diane last night. We really enjoyed the game night. I posted the salad dressing on today’s post “Paleo Heaven”. Please send us any recipes that you have had success with- we would love to try new recipes.

        No problem, glad to share. Here is one of our favorites.

        Kale and Kielbasa Skillet
        Ingredients
        2 TBS coconut oil, grass-fed butter or ghee
        ½ onion, chopped
        2 sweet potatoes, diced
        ½ bunch kale, destemmed and cut into strips
        1 package all-natural pork or turkey kielbasa, diced
        1 TBS apple cider vinegar
        Salt and pepper
        1. In a large sauté pan, heat coconut oil over medium-high heat. When shimmery and fragrant, add onion and sauté until translucent, 5-6 minutes.
        2. Add sweet potatoes and sauté, stirring often, until tender, about 8 minutes.
        3. Add kale and wilt, 2-3 minutes, and then add kielbasa to heat through.
        4. Deglaze the pan with the vinegar and season with salt and pepper to taste. Enjoy!

        I don’t deglaze the pan with apple cider vinegar, because we didn’t like the taste.
