Hello! It’s Sunday and Zach and I finally had a relaxing day where we didn’t have much going on.
We woke up and decided we should use our one paleo dessert for the month. We landed upon Paleomg’s Chocolate Coffee Donuts. It was a really good choice, I will say, but with our small food processor, we did it in 2 batches. The batter included: bananas, dates, eggs, coconut flour, baking powder and soda, salt, vanilla and cinnamon. We put those in a donut pan and baked for about 20 minutes. After they cooled, we topped them with dark chocolate that was mixed with coffee grounds and sea salt was sprinkled on the top. That with a cup of coffee was a perfect combo for a Sunday morning.
After indulging on our donuts, we decided to head down to my parents house to visit. They had requested that we bring our cookbooks so we could make them something paleo for lunch. They already had some frozen shrimp, so we decided on shrimp tacos with a guacamole topping. We ate them with lettuce cups. Our sides included carrots and broccoli. My mom and step dad both agreed they could totally eat paleo if it tasted that good all of the time.
It looks like it will be another busy week for Zach and I. The Crossfit open is coming up, so Zach has been doing some extra training at the gym. My work schedule will be a little more normal this week, so hopefully we will have some new updates this week with different recipes and pictures to include. We have all of our food prepped and we are ready to rock out another paleo week.
