Sweet Potato Fries with a Twist

Hello & Happy Monday!
Zach wasn’t coaching at the gym tonight, so we had a chance to cook and have dinner together. We made a rub for salmon filets that came from the “Well Fed” cook book. The rub included coconut oil, lemon juice, coriander seed, cumin, cayenne, and some salt and pepper. Zach was very excited to use our new mandolin slicer (that my mom generously donated to us ;)) to cut up sweet potatoes and make them into fries. He chopped those up, put them on a cookie sheet and added chopped up bacon and pecans. I was pleasantly surprised with how they turned out. Sweet and salty is always a plus! We baked them at 425 for 20 minutes and turned the broiler on at the end to make them a little crispy for about 5 minutes. We both wanted more when they were all gone. Next time we know to make extra.
